Have you tried hummus dip? Guacamole? My kids make bean dip with refried beans, salsa and a can of corn. They mix it well, then chow down with baked tortilla chips. This is a favorite after school snack for my 16 year-old twins. Also, popcorn (microwaved in its own brown paper bag) Tabbouleh. Falafels... oooo those are fried, but if you bake them with just a spray of oil on top, they are great! Tahini sauce (sesame seeds ground to a paste... very nutritious. How about grinding oatmeal into flour and making pancakes. How about grinding flax seed into flour and adding to breads, muffins, or cookies. How about adding pecans, walnuts, almonds or peanuts to muffins, breads, or pancakes? Also, don't worry about "high quality protein" because a human only needs 5 to 8 percent of his/her diet to be protein to grow and flourish. If the kids are getting the majority of their calories from a whole foods, plant based diet (with occasional meat if you must) then they will be healthier than their obese (read -------> FAT) peers who eat a junk food diet. Sorry, got on my soapbox there.... ;-)
